Have you considered a simple discussion board? Kids can compose offline,
and when it is in final form it can be copied and pasted under the
student's ID. We allow only firstname/lastinitial for student security
reasons.

Our webmaster set it up, I simply run it, so I do not know the technical
details of getting it up and running, but I do know there are a couple
freebies out there, too. Easy to use, student and teacher friendly once it
is up. Plus, it is a great motivator to get kids writing. Seeing their
work on the web is powerful.
